DORM ROOM CUISINE

Living in a dorm room is challenging, especially when the only kitchen appliance you have is refrigerator, microwave and a coffee pot. There is only so many times you can popcorn for dinner or an 'Amy's Organic' frozen entree before you're burned out.

I was pleasantly surprised the other day when a 'CREATIVE MOMENT' turned out fabulous - and healthy. The best part? It was ready in 3 MINUTES. Yes people, 3 minutes.


THE 3 MINUTE MEAL:


1/2 CUP OF PACKED COOKED RICE (BROWN or WHITE). I use microwavable rice. Don't heat - add straight from package.

Pour chicken and broth over rice




Sprinkle on frozen soy beans or your favorite green frozen vegetable (1/4 - 1/2 cup)

A couple dashes of this



Cover with saran wrap to steam


Microwave 2-3 minutes


Sprinkle 1/2 of a minced kiwi and its juices over the hot entree.
(I take a knife to one half and make vertical and horizontal cuts. Scoop out with a spoon)

Sprinkle a TABLESPOON of sliced roasted almonds over the kiwi fruit. And that's it - you're done!




You'll end up with a dish that looks like this!

SODIUM: 459g

The kiwi is the perfect compliment to the chicken and rice, but you could always substitute the proteins, fruits and seasoning to make it unique. The almonds give it a bit of crunch and flavor - and is an important ingredient in this dish.

This looks really good. I'll leave out the chicken ~~>(vegan) and try it with a vegan substitute... but yum! :)

Scoot over and let me have a bite! Delicious! I just discover Trader Joe's jasmine microwavable rice, mm mm good and easy.

Wow I am impressed I rarely ever use a microwave so I am really at a loss, maybe I would try a wheat tortilla fill it with pepperjack cheese and top with chopped sweet red peppers :)

Hi Krista - I love things wrapped up in tortillas and microwaved. They always turn out great. Right now I'm on a NO dairy, red meat, condiments,caffeine, sugar or alcohol DETOX diet. I'm on week 2 and feel great. I'm essentially living on tons of fruit (8-9 servings a day), protein shakes, bread, rice and nuts. With the occasional can of chicken or pouch of albacore tuna thrown in for variety. I have to do my fitness test soon, so I'm going back into training mode.

Love that you dolls (+Tassos) enjoy the microwave cooking post. If I have any other winning dishes I'll post them too.

I'm off tomorrow morning to a massive flea market!! Cool pics and posts will follow next week.
